Assessment of the presence of Escherichia Coli in Minas frescal cheese in the region of Londrina - Paraná
Abstract
Minas frescal cheese, popular in Brazil, is valued for its mild flavor and soft texture, but it has a short shelf life due to its high moisture content and need for refrigeration. This characteristic makes it highly susceptible to microbial contamination, which can occur during milking or processing. Milk pasteurization is essential to eliminate pathogenic microorganisms; however, adopting good hygiene practices throughout the entire production chain is crucial to prevent recontamination. The presence of Escherichia coli, a bacterium often associated with poor hygiene in food production, can cause severe intestinal infections, such as diarrhea, when consumed in contaminated products. Its detection in cheese indicates sanitary failures, necessitating strict measures to ensure food safety. The objective of this study was to evaluate the presence of E. coli in Minas frescal cheese sold clandestinely in the municipality of Londrina. Samples were collected by purchasing cheese from open-air markets, small grocery stores, and small producers who make the product at home without proper inspection. The 3M™Petrifilm™ plates method was used to count the bacterial colonies. A total of 20 samples of Minas frescal cheese were analyzed, of which 11 showed E. coli contamination levels exceeding those permitted by law. Given these results, preventive measures must be taken, considering the risk that bacterial contamination poses to public health.
